INGREDIENTS FOR THE MARINADE

  • 2 tablespoons lemon juice
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder (adjust according to spice preference)
  • Salt, to taste

INGREDIENTS FOR THE SAUCE

  • 2 tablespoons vegetable oil or ghee
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 teaspoon turmeric powder
  • 1 teaspoon paprika
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder
  • 1 can (400g) crushed tomatoes
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)

STEP 1: MARINATE THE CHICKEN

In a large bowl, combine yogurt, lemon juice, ground cumin, ground coriander, smoked paprika, turmeric powder, garam masala, chili powder, and salt. Add the chicken pieces to the marinade and toss until well-coated. Cover the bowl and refrigerate for at least 1 hour, or preferably overnight, to allow the flavours to meld.

STEP 2: COOK THE CHICKEN

Preheat your grill or broiler to medium-high heat. Thread the marinated chicken pieces onto skewers and grill or broil for 8-10 minutes, turning occasionally, until the chicken is cooked through and slightly charred around the edges. Remove from heat and set aside.

STEP 3: PREPARE THE SAUCE

Heat vegetable oil or ghee in a large skillet over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes. Pour in the crushed tomatoes and bring the mixture to a simmer. Cook for 10-15 minutes, stirring occasionally, until the sauce thickens. Stir in the heavy cream and season with salt and pepper to taste. Simmer for an additional 5 minutes.

STEP 4: FINISH AND SERVE

Add the grilled chicken pieces to the sauce and stir until evenly coated. Let the chicken tikka masala simmer for a few more minutes to allow the flavours to meld together. Garnish with freshly chopped cilantro before serving.
